Viruddha Ahara: Toxic Food Combinations and Contemporary References

The clinical paradigm of Viruddha Ahara (incompatible or dietary-antagonistic food combinations) constitutes a cornerstone of preventive health and chronic toxicology within classical Ayurveda (Agada Tantra). This chapter systematically evaluates the eighteen types of dietary incompatibility (Ashta-dasha Viruddha)—including processing (Samskara), processing order (Krama), potency (Virya), and environmental factors (Desha)—as documented across the foundational Brihatrayi texts. Bridging classical scriptural logic with contemporary dietary sciences, the discussion correlates traditional toxicological pathodynamics (Garavisha/Dushivisha) with modern biomedical processes, such as the thermal formation of cytotoxic 5-hydroxymethylfurfural (5-HMF) in processed honey and the metabolic accumulation of Advanced Glycation End-products (AGEs) driving systemic inflammation and gut dysbiosis. By highlighting target-specific cell safety profiles and evidence-based interpretation, this chapter establishes a rigorous nutritional framework for recognizing dietary incompatibilities in integrative public healthcare.
