Aspartilendopeptidasas de Silybum marianum (L) Gaertn con potencial aplicación en la industria láctea

El objetivo general de este trabajo fue aislar, purificar y caracterizar peptidasas aspárticas presentes en flores de Silybum marianum (L.) Gaertn. (Asteraceae) y estudiar su potencial aplicación como “cuajo vegetal”. A partir de este objetivo general se plantearon los siguientes objetivos específicos: 1. Obtener preparaciones enzimáticas crudas de flores de Silybum marianum (L.) Gaertn. y caracterizar los extractivos obtenidos. 2. Purificar parcialmente los extractos crudos y caracterizar las preparaciones parcialmente purificadas. 3. Determinar la actividad coagulante de leche bovina de las preparaciones parcialmente purificadas. 4. Obtener hidrolizados parciales de proteínas de leche bovina, caprina y ovina y realizar el análisis electroforético de los mismos. 5. Purificar la enzima de interés a partir de los extractivos de Silybum marianum (L.) Gaertn. y caracterizar la enzima purificada.
