STUDYOF THE BIOLOGICALPROPERTIESOF LACTICACID BACTERIA

This article presents the results of the study of the biological properties of lactic acid bacteria.In total, we studied 26 strains of lactic acid bacteria.In the course of the study, we identified the morphological features, biological, antimicrobial properties of lactic acid bacteria.As a result of the conducted research, out of 26 strains of lactic acid bacteria, 6 strains were distinguished by their biological properties: Lactobacillus casei(210), Pediococcus acidilactici(29), Lactobacillus curvatus(51), Lactobacillus brevis(140), Lactobacillus plantarum(135), Pediococcus pentosaceus(183).For industrial use, lacticacidbacteriamusthavecertainproperties. Strainsof lacticacidbacteriashould not produce enzymes related to pathogenic factors, for example, catalase, etc.A qualitativetestforcatalaseactivityshowed that the selected lactic acid bacteria did not have catalase activity.Also, strains of Lactobacillus casei(210), Pediococcus acidilactici(29), Lactobacillus curvatus(51), Lactobacillus brevis(140) did not dilute gelatin and did not show amylase activity.Allthelacticacid bacteriastudied usecarbohydratesasenergyandthenproducelacticacid,andit was alsofoundthatthe studiedstrainLactobacillusplantarum(135)does notfermentmelibiose,raffinoseandmanitol, andthattheselacticacid bacteriaaffectthegrowthof opportunisticbacteria.
