Thin Layer Shade Drying of Liquorice (Glycyrrhiza glabra)

Liquorice roots (Glycyrrhiza glabra) were harvested and cut into small pieces and were dried to safe moisture content for storage i.e., between 10-12%. Initial moisture content of liquorice roots was 72.58 %db, and it took 76 hours to reach up to a level of 11.42 % db. Five different thin layer mathematical models namely; Newton, Page, Modified Page, Henderson and Pabis, Geometric were linearised and fitted with drying time and moisture ratio. Henderson and Pabis model satisfactorily described the shade drying of liquorices with the coefficient of correlation (r) of 0.9642 and standard error (e) 0.1613
