Characterization of acylated steryl glycosides from Euryale ferox by nuclear magnetic resonance spectroscopy

AbstractHigh resolution nuclear magnetic resonance spectroscopy has been used to identify the main acylated steryl glycosides isolated from Euryale ferox as 24‐ethylcholest‐5‐en‐3β‐O‐β‐D‐pyranoglucosyl palmitate and 24‐ethylcholesta‐5,22E‐dien‐3β‐O‐β‐D‐pyranoglucosyl palmitate. The application of this technique to the identification of acylated steryl glycosides within complex mixtures is described.
