Etude de la maturation du raisin considérée grain par grain

L'analyse faite grain par grain permet de chiffrer l'hétérogénéité des baies de raisin suivant leur grosseur, leurs teneurs en sucre, en acidité, et d'étudier la répartition des baies d'après ces divers paramètres. Elle permet de dégager grâce à l'analyse statistique certaines relations entre constituants : la grosseur du raisin est assez indépendante de la richesse en sucre ou en acidité, alors qu'il y a des facteurs communs entre ces deux constituants. Par contre l'étude grain par grain ne donne pas une meilleure image de l'évolution du raisin au cours de la maturation et n'éclaire pas mieux les phénomènes biochimiques.
