Abstract This chapter focuses on the losses acquired during postharvest handling, general characteristics, postharvest physiology, storage potential, postharvest handling, insect disinfestation, storage diseases, food safety and ripening of tropical fruits. The requirements for the postharvest handling of organically produced fruits and the logistics of the supply and marketing chain are also discussed.
