Flavor Wheel for Sensory Analysis of Fish Raised in Recirculating Aquaculture Systems

Abstract A variety of preharvest off-flavors can occur in fish raised in recirculating aquaculture systems. Studies involving the sensory evaluations of fillets of eight different fish species that were raised in recirculating aquaculture systems either commercially or at research facilities were performed using trained panelists in two research laboratories. A flavor wheel of the types/descriptors of off-flavors that can occur in fish that are cultured in recirculating aquaculture systems, along with general categories and degrees of objectionability, was subsequently developed from the combined data as a reference guide for producers and researchers.
