Optimization of Soluble Organic Selenium Accumulation during Fermentation of Flammulina velutipes Mycelia

Selenium is an essential nutrient with diverse physiological functions, and soluble organic selenium (SOS) sources have a higher bioavailability than inorganic selenium sources.
