USE OF TRITICALE GRAIN IN THE ALCOHOL TECHNOLOGY

The technology of alcohol production from grain raw materials is based on the enzymatic hydrolysis of starch to fermentable carbohydrates with their subsequent fermentation by Saccharomyces cerevisiae. The basic raw materials for the production of alcohol are currently cereals (rye and wheat). Triticale, a
hybrid of rye and wheat, is a promising grain crop for alcohol production by several crucial indicators. In this
regard, the study investigated the potential of using the Bashkir short-stemmed and Bashkir 3 triticale breeding
varieties. These varieties are included in the state register for the Volga-Vyatka and Ural regions. Alcohol
yeast Saccharomyces cerevisiae XII was used to ferment the wort. A complex of enzymes of amylolytic, proteolytic and hemicellulase action was used for saccharification. It was found that the selected triticale varieties
meet the requirements of the Russian standard GOST 34023-2016. During fermentation, it was found that the
Bashkir 3 variety showed the best fermentation performance. After 70 hours of fermentation, the concentration
of residual carbohydrates was 0.58 g/100 cm3
. The alcohol yield indicators were 63.3 and 64.0 cm3
/100 g of
starch in the Bashkir 3 and Bashkir short-stem varieties, respectively. Alcohol impurities, except methanol, in
brew distillates were within acceptable values (9341.407 in alcohol obtained from the Bashkir short-stemmed
triticale and 8966.607 in alcohol from the Bashkir 3 variety). Thus, it is advisable to use triticale grain of the
selected varieties for alcohol production, as the grain can ensure a good alcohol yield. The study findings are
consistent with other researchers’ studies on prospects of using triticale grain in the alcohol technology. The
