The Matcha Green Tea Quality Investigation

Статья посвящена вопросу исследования зеленого чая сорта матча. Цель работы заключалась в проведении исследований образцов чая с целью нахождения их идентификационных показателей. Показано, что образцы чая японского происхождения обладали большей экстрактивностью по сравнению с образцами чая из Китая. Анализ азотных фракций показал, что чай матча более ферментирован, поскольку содержит больше аминокислот независимо от страны изготовления. Водорастворимая фракция азота представлена аминным азотом, а глютелиновая фракция — в 3–8 раз ниже значений содержания щелочерастворимой фракции зеленого чая другого сорта. Содержание общих полифенолов в образцах чая матча находится в диапазоне 125,9–156,9 мг/г, содержание катехинов выше, чем в контрольном образце на 16% для образца 2 и на 53% для образца 4. Показано, что содержание танинов в образцах китайского чая колеблется в пределах 2,18–3,29 мг%, в японских — 3,26–8,6 мг%. Самое низкое содержание танинов наблюдали в образце 1 (японский чай матча), самое высокое — в чае образец 4, что зависит от условий обработки чайного сырья. По содержанию кофеина образцы были в диапазоне 0,88–3,15%, что выявило отсутствие корреляции у образца 3, где уровень кофеина был ниже. Показано, что соотношение количества полифенолов и аминокислот, соотношение количества общих полифенолов и азота глютелиновой фракции могут представлять идентификационные параметры чая матча — между данными соотношениями и содержанием катехинов и танинов наблюдалась корреляция. Показано, что содержание хлорофилла оказалось в пределах 2,9–8,9 мг/г чая, что находится в обратной корреляции с содержанием полифенолов и хлорофилла. The article is devoted to the issue of researching matcha green tea. The goal of the work was to study tea samples to find identification indicators, which was solved using generally accepted methods of analysis. The authors showed that tea samples of Japanese origin had greater extract content compared to samples from China. Analysis of nitrogen fractions showed that matcha tea is more fermented because it contains more amino acids, regardless of the country of origin. The water-soluble fraction of soluble nitrogen is represented by amine nitrogen, and the glutelin fraction is 3–8 times lower than the content of the alkali-soluble fraction of other types of green tea. The total polyphenols content in matcha tea samples was in the range of 125.9–156.9 mg/g, catechins were higher than the control by 16% for sample No. 2 and 53% for sample No. 4. It has been shown that the tannin content in Chinese tea samples ranges from 2.18–3.29 mg%, in Japanese tea samples — 3.26–8.6 mg%. The lowest tannin content was observed in the Japanese matcha tea sample No. 1, the highest in tea No. 4, which depends on the processing conditions of the tea raw materials. In terms of caffeine content, the samples were in the range of 0.88–3.15%, which revealed a lack of correlation in sample No. 3, where the caffeine level was lower. The authors showed that the ratio of the amount of polyphenols and amino acids, the ratio of the amount of total polyphenols and nitrogen of the glutelin fraction can represent the identification parameters of matcha tea — a correlation was observed between these ratios and the content of catechins and tannins. It was shown that the chlorophyll content was in the range of 2.9–8.9 mg/g of tea, which is inversely correlated with the content of polyphenols and chlorophyll.
