The rapid growth of the non-alcoholic beverage (NAB) market represents a significant opportunity for breweries and taprooms to diversify draught offerings and attract new consumer segments. Globally, the NAB market is projected to rise from $1.41 trillion in 2025 to approximately $2.68 trillion by 2034, reflecting a robust compound annual growth rate (CAGR) of 7.34% [1]. In the United States alone, the market is expected to grow from $1.58 trillion in 2025 to $2.76 trillion by 2034, with a CAGR of 6.4% over the same period [2]. As health-conscious and moderation trends drive increased demand for NABs, industry stakeholders are expanding draught systems to capitalize on this evolving market. However, non-alcoholic beverages present unique food safety challenges compared to traditional fermented products. Unlike beer and other alcoholic beverages, NABs lack ethanol’s natural antimicrobial properties and often have higher pH.
